Nutty Mushroom Caps Recipe - Cooking Index
1 lb | 454g / 16oz | Large mushrooms - washed |
= (remove and chop stems finely) | ||
1 | Onion - chopped fine (small) | |
1/2 cup | 99g / 3.5oz | Melted butter |
1/2 cup | 118ml | Ground walnuts |
1 tablespoon | 15ml | Lemon juice |
2 tablespoons | 30ml | Well-crushed pork rinds |
1/4 cup | 59ml | Heavy cream |
1/4 cup | 59ml | Water |
Dry caps on paper towel. Chop stems and onion very fine and saute in butter for 5 minutes. Add ground walnuts, lemon juice and pork rinds and stir together.
Place mixture into mushroom caps and press firmly with fingers.
Arrange in baking dish and pour 1/4 cup cream diluted with 1/4 cup water around caps in dish. Bake 25 minutes at 350 degrees. Serve immediately.
