Nutty Mushroom Caps

Recipe Ingredients

1 lb 454g / 16ozLarge mushrooms - washed
  = (remove and chop stems finely)
1   Onion - chopped fine (small)
1/2 cup 99g / 3.5ozMelted butter
1/2 cup 118mlGround walnuts
1 tablespoon 15mlLemon juice
2 tablespoons 30mlWell-crushed pork rinds
1/4 cup 59mlHeavy cream
1/4 cup 59mlWater

Recipe Instructions

Dry caps on paper towel. Chop stems and onion very fine and saute in butter for 5 minutes. Add ground walnuts, lemon juice and pork rinds and stir together.

Place mixture into mushroom caps and press firmly with fingers.

Arrange in baking dish and pour 1/4 cup cream diluted with 1/4 cup water around caps in dish. Bake 25 minutes at 350 degrees. Serve immediately.

This recipe yields 8 servings; 2.2 carb grams per serving.
