1 | Frozen chopped spinach - thawed, drained well | |
2 cups | 474ml | Mayonnaise |
1/4 cup | 15g / 0.5oz | Chopped white onion |
1 cup | 93g / 3.3oz | Garlic clove - minced (small) |
1 tablespoon | 15ml | Lemon juice |
1 tablespoon | 15ml | Cucumber - cut round medallions (medium) |
Ripe olive slices or pimiento - for garnish |
Put first 5 ingredients in blender at high speed to mix well. Refrigerate at least 4 hours (overnight is best).
While very cold, form small balls with spinach mix and place each one on a cucumber medallion. Top with a slice of ripe olive or pimiento and arrange on serving plate.
