Recipe Ingredients

1   Frozen chopped spinach - thawed, drained well
2 cups 474mlMayonnaise
1/4 cup 15g / 0.5ozChopped white onion
1 cup 93g / 3.3ozGarlic clove - minced (small)
1 tablespoon 15mlLemon juice
1 tablespoon 15mlCucumber - cut round medallions (medium)
  Ripe olive slices or pimiento - for garnish

Recipe Instructions

Put first 5 ingredients in blender at high speed to mix well. Refrigerate at least 4 hours (overnight is best).

While very cold, form small balls with spinach mix and place each one on a cucumber medallion. Top with a slice of ripe olive or pimiento and arrange on serving plate.
