1 tablespoon | 15ml | Olive oil |
1/2 cup | 31g / 1.1oz | Chopped onions |
1/2 cup | 55g / 1.9oz | Chopped celery |
1/4 cup | 36g / 1.3oz | Chopped bell pepper |
1 cup | 146g / 5.1oz | Diced ham |
4 cups | 948ml | Chicken stock |
1 | Bay leaf | |
1/2 teaspoon | 2.5ml | Dried basil |
1/4 cup | 59ml | Cream |
1/4 cup | 36g / 1.3oz | Grated cheddar cheese |
3/4 cup | 109g / 3.8oz | Cubed Velveeta cheese |
Chopped green onions - for garnish |
Fry all onions, celery, and bell pepper in oil until tender. Add ham and saute to release some oils and meld the flavors. Add stock/broth, bay leaf, and basil.
Simmer to reduce slightly (20 to 30 minutes). Add cream and return to boil to thicken a bit. Slowly add cheese -- stirring constantly.
Serve immediately. Garnish with green onion.
This recipe yields 8 servings; 3 carb grams per serving.
