Ham And Bean Soup

Recipe Ingredients

8 oz 227gCubed ham
1/4 cup 27g / 1ozFinely-diced celery
1 cup 237mlWater
1 cup 237mlLow-sodium chicken broth
1   Eden black soy beans
1/4 cup 27g / 1ozTiny-diced carrot
2 teaspoons 10mlMinced onion
1/4 teaspoon 1.3mlMinced garlic - (optional)
1/8 teaspoon 0.6mlCayenne pepper
1/4 teaspoon 1.3mlCumin
1/4 teaspoon 1.3mlSalt

Recipe Instructions

In a medium sauce pan, brown the ham. Add 1 cup of water and scrape glaze off bottom of pan. Add low-sodium chicken broth.

Drain the water from the can of beans. Add beans to the sauce pan.

Add all other ingredients. Stir. Bring to a boil; turn down heat and simmer for at least 1 hour to bring out the flavors -- the longer, the better (3+ hours being best.)

This recipe yields 6 servings; 3 carb grams per serving.
