Ham And Bean Soup Recipe - Cooking Index
8 oz | 227g | Cubed ham |
1/4 cup | 27g / 1oz | Finely-diced celery |
1 cup | 237ml | Water |
1 cup | 237ml | Low-sodium chicken broth |
1 | Eden black soy beans | |
1/4 cup | 27g / 1oz | Tiny-diced carrot |
2 teaspoons | 10ml | Minced onion |
1/4 teaspoon | 1.3ml | Minced garlic - (optional) |
1/8 teaspoon | 0.6ml | Cayenne pepper |
1/4 teaspoon | 1.3ml | Cumin |
1/4 teaspoon | 1.3ml | Salt |
In a medium sauce pan, brown the ham. Add 1 cup of water and scrape glaze off bottom of pan. Add low-sodium chicken broth.
Drain the water from the can of beans. Add beans to the sauce pan.
Add all other ingredients. Stir. Bring to a boil; turn down heat and simmer for at least 1 hour to bring out the flavors -- the longer, the better (3+ hours being best.)
This recipe yields 6 servings; 3 carb grams per serving.
