Cool As A Cucumber Soup Recipe - Cooking Index
Hothouse (also known as English) cucumbers have very small seeds and are sweeter in taste and firmer in texture than regular cucumbers.
Courses: Soup| 4 | Green onions - trimmed, chopped | |
| 1 | Garlic clove - pressed | |
| 1 | Hothouse cucumber - peeled, seeded, (medium) | |
| And sliced | ||
| 1/2 teaspoon | 2.5ml | Dried tarragon | 
| 1 | Reduced-sodium chicken broth - - (14 1/2 oz) | |
| 1 tablespoon | 15ml | Fresh lemon juice | 
| 1 cup | 237ml | Buttermilk | 
| Salt - to taste | ||
| Freshly-ground black pepper - to taste | ||
| 1/4 cup | 36g / 1.3oz | Chopped fresh parsley | 
In a blender, combine all ingredients except parsley. Puree until smooth. Add salt and pepper to taste. Chill 1 hour. Garnish with parsley before serving.
