Smoked Paprika Romesco Sauce

Marcona almonds are available at Whole Foods markets, Bristol Farms and Trader Joe's. Smoked paprika is available at La Espaņola in Harbor City or Surfas in Culver City.

Recipe Ingredients

1/2 cup 46g / 1.6ozWhole blanched almonds, preferably Marcona - roasted, salted
1   Piquillo peppers - (7 oz) - drained, and
  Coarsely chopped, or 1/2 (13.75 oz) can
1/2 cup 118mlExtra-virgin olive oil, preferably Spanish
1 tablespoon 15mlSmoked paprika
1/8 teaspoon 0.6mlCayenne - (to 1 /4)
2   Garlic cloves - minced
1 tablespoon 15mlSherry vinegar
  Salt - to taste

Recipe Instructions

Combine the almonds, piquillos, olive oil, smoked paprika and cayenne in a blender. Process until smooth.

Transfer to a bowl; stir in the garlic and vinegar and salt to taste. Serve as a spread on bread, a sauce for grilled fish or meat or as a dip for roasted potatoes.

This recipe yields 2 cups.
