Smoked Paprika Romesco Sauce Recipe - Cooking Index
Marcona almonds are available at Whole Foods markets, Bristol Farms and Trader Joe's. Smoked paprika is available at La Espaņola in Harbor City or Surfas in Culver City.
Courses: Sauces1/2 cup | 46g / 1.6oz | Whole blanched almonds, preferably Marcona - roasted, salted |
1 | Piquillo peppers - (7 oz) - drained, and | |
Coarsely chopped, or 1/2 (13.75 oz) can | ||
1/2 cup | 118ml | Extra-virgin olive oil, preferably Spanish |
1 tablespoon | 15ml | Smoked paprika |
1/8 teaspoon | 0.6ml | Cayenne - (to 1 /4) |
2 | Garlic cloves - minced | |
1 tablespoon | 15ml | Sherry vinegar |
Salt - to taste |
Combine the almonds, piquillos, olive oil, smoked paprika and cayenne in a blender. Process until smooth.
Transfer to a bowl; stir in the garlic and vinegar and salt to taste. Serve as a spread on bread, a sauce for grilled fish or meat or as a dip for roasted potatoes.
This recipe yields 2 cups.
