Passover Potato Kugel Recipe - Cooking Index
6 cups | 1422ml | Baking potatoes (medium) |
1 cup | 110g / 3.9oz | Carrot (large) |
1/4 cup | 59ml | Matzo meal |
1 1/2 teaspoons | 7.5ml | Salt - or to taste |
1/4 teaspoon | 1.3ml | Freshly-ground black pepper - or to taste |
2 | Eggs - beaten | |
1/4 cup | 59ml | Oil |
Heat the oven to 350 degrees. Grease a 1 1/2-quart baking dish.
Peel the potatoes and carrot and chop together in a food processor. Place in a bowl and add the matzo meal, salt, pepper, eggs and oil. Mix thoroughly.
Pour into the dish. Bake until the top is golden brown, 1 hour.
This recipe yields 6 to 8 servings.
Each of 8 servings: 201 calories; 461 mg. sodium; 53 mg. cholesterol; 8 grams fat; 2 grams saturated fat; 28 grams carbohydrates; 4 grams protein; 2 grams fiber.
