Recipe Ingredients

1 teaspoon 5mlTomato - chopped (about 1 (large)

1 tablespoon 15mlChopped fresh or
1 teaspoon 5mlDried basil leaves
2   Tomato sauce - (15 ounces each)
2 cups 474mlCreamed cottage cheese
1/4 cup 36g / 1.3ozGrated parmesan cheese
1   Garlic - finely chopped
1 teaspoon 5mlChopped fresh or
1/2 teaspoon 2.5mlDried thyme leaves
1 teaspoon 5mlOnion - chopped (small)
2   Eggs
1   Frozen chopped - (10 ounces)
  Spinach - thawed and drained
1   Manicotti shells - (8 ounces) (14 shells)
1 cup 146g / 5.1ozShredded mozzarella cheese (4 ounces)

Recipe Instructions

Heat oven to 350F. Grease rectangular pan or baking dish, 13 X 9 X 2 inches. Mix tomato, basil and tomato sauce. Spread 1-1/2 cups evenly in pan. Mix remaining ingredients except manicotti and mozzarella cheese. Fill uncooked manicotti shells with spinach mixture. Arrange in pan. Pour remaining tomato sauce mixture over manicotti. Cover and bake about 1-1/2 hours or until manicotti shells are tender. Sprinkle with mozzarella cheese.
