Lime Jell-O Marshmallow Cottage Cheese Surprise Recipe - Cooking Index
| 1 | Lime-flavored gelatin - (3 oz) | |
| 1 cup | 237ml | Boiling water |
| 1 | Undrained crushed pineapple - (20 oz) | |
| 1 cup | 146g / 5.1oz | Cottage cheese |
| 1/2 cup | 118ml | Whipped cream or Cool Whip |
| 1 | Maraschino cherries - (6 oz) - drained | |
| 1/4 cup | 36g / 1.3oz | Chopped pecans |
| 1 cup | 237ml | Miniature marshmallows |
Place the gelatin in a bowl, add the boiling water and stir until dissolved, 1 to 2 minutes. Drain the pineapple, reserving 1/2 cup of the syrup. Add that syrup to the gelatin. Chill until thickened but not set, about 1 hour.
Fold in the pineapple, cottage cheese, whipped cream, cherries, pecans and marshmallows. Pour into a 5-cup mold. Chill until set, at least 4 hours. Unmold onto a plate.
This recipe yields 9 servings.
Each serving: 180 calories; 126 mg sodium; 6 mg cholesterol; 4 grams fat; 1 gram saturated fat; 33 grams carbohydrates; 4 grams protein; 0.83 gram fiber.
