Smoky Pineapple And Mango Salsa Recipe - Cooking Index
The chipotle chile adds the smoky edge. If you prefer just "straight" heat, use chopped jalapeņo instead. This tastes best if refrigerated a few hours or overnight.

1 | Firm ripe mango - peeled, diced | |
1 | Plum tomato - seeded, diced (large) | |
3 tablespoons | 45ml | Minced onion |
1/2 | Canned chipotle in adobo sauce - pureed | |
2 tablespoons | 30ml | Lime juice |
1 teaspoon | 5ml | Honey |
1 teaspoon | 5ml | White wine vinegar |
2 tablespoons | 30ml | Minced cilantro |
1/2 teaspoon | 2.5ml | Salt |
Place the pineapple, mango, tomato, onion, chipotle, lime juice, honey, vinegar, cilantro and salt in a bowl. Toss well to mix. Taste; adjust the seasoning, if necessary.
Serve immediately, or cover and refrigerate a few hours or overnight. Stir well before serving.
This recipe yields 8 to 10 servings.
