4 | Meyer lemons - (for 1 cup juice) (large) | |

Wash the lemons. Remove the zest, then cut the lemons in half and juice. Pour the juice in a bowl and mix well with the zest and sugar. Let the mixture macerate for 24 hours at room temperature, stirring occasionally.
Strain the syrup into clean sterilized jars and store in the refrigerator. Add 1 to 3 teaspoons to each cup of iced tea. Add a sprig of mint to the iced tea if desired.
This recipe yields about 1 1/4 cups.
