Greek-Style Turkey Loaves

Recipe Ingredients

2 lbs 908g / 32ozGround turkey
1 1/2 cups 219g / 7.7ozFresh whole-wheat bread crumbs
1/2 cup 73g / 2.6ozFinely-chopped pitted Kalamata olives
1/2 cup 31g / 1.1ozFinely-chopped onion
4   Garlic cloves - minced
1/2 cup 73g / 2.6ozFinely-chopped spinach
1 teaspoon 5mlSalt
1/2 cup 118mlTomato sauce
1   Tomato paste - (6 oz)
2   Eggs - beaten
1/4 cup 36g / 1.3ozChopped parsley
1/2 teaspoon 2.5mlGround nutmeg
1 tablespoon 15mlLemon juice

Recipe Instructions

Heat the oven to 350 degrees.

Combine the turkey, bread crumbs, olives, onion, garlic, spinach, salt, tomato sauce, tomato paste, eggs, parsley, nutmeg and lemon juice in a large bowl. Lightly knead or stir to mix.

Divide the mixture between two loaf pans and shape into loaves. Bake until the loaves are firm to the touch and have shrunk from the sides of the pan, 55 to 65 minutes.

This recipe yields 6 servings.
