1 teaspoon | 5ml | Baking soda - dissolved in |
1 tablespoon | 15ml | Cold milk |
2 1/2 cups | 156g / 5.5oz | Flour |
1 teaspoon | 5ml | Salt - or to taste |
2 1/2 cups | 592ml | Oatmeal |
1/2 cup | 46g / 1.6oz | Shredded sweetened coconut |
1 cup | 160g / 5.6oz | Raisins |
Heat the oven to 375 degrees. Grease a baking sheet.
Combine the sugar and shortening in a mixer. Add the eggs, vanilla and dissolved baking soda and beat until smooth.
Combine the flour and salt and slowly add to the wet ingredients. Pulse raisins in a food processor until chopped fine. Using a wooden spoon, stir in the oatmeal, coconut and raisins.
Flatten pieces of dough about the size of walnuts on the baking sheet, spaced 1 inch apart. Bake the cookies until they're golden and crisp, 15 to 20 minutes.
This recipe yields 48 cookies.
Each cookie: 115 calories; 79 mg sodium; 9 mg cholesterol; 5 grams fat; 1 gram saturated fat; 17 grams carbohydrates; 1 gram protein; 0.71 gram fiber.
