Pumpkin Mash Recipe - Cooking Index
This can take the place of the usual sweet potatoes at Thanksgiving. Dress it up with a marshmallow topping or a little more crystallized ginger on top

1 tablespoon | 15ml | Finely-minced crystallized ginger |
1/4 teaspoon | 1.3ml | Freshly-ground white pepper |
1/2 teaspoon | 2.5ml | Salt |
2 tablespoons | 30ml | Butter |
3 tablespoons | 45ml | Milk - see * Note |
* Note: Substitute half-and-half or whipping cream for the milk to make a richer dish.
Warm puree in saucepan over medium heat, then whisk in ginger, pepper, salt, butter and milk until well blended. Serve immediately or keep warm until serving.
This recipe yields 4 (1/2-cup) servings.
Each serving: 105 calories; 366 mg sodium; 16 mg cholesterol; 6 grams fat; 12 grams carbohydrates; 2 grams protein; 1.99 grams fiber.
