Charred Sweet Onions And Blue Cheese Recipe - Cooking Index
2 tablespoons | 30ml | Oil |
1 tablespoon | 15ml | Sweet onion - halved, and (large) |
Thinly sliced | ||
1 teaspoon | 5ml | Balsamic vinegar |
1 teaspoon | 5ml | Red wine vinegar |
2/3 cup | 97g / 3.4oz | Crumbled blue cheese |
Salt - to taste | ||
Freshly-ground black pepper - to taste | ||
1 tablespoon | 15ml | Snipped chives - for garnish |
Heat oil in large heavy skillet over medium-high heat. Add onion. Cook, stirring occasionally to avoid burning but to allow browning, about 5 to 6 minutes. Stir in balsamic and red wine vinegars, then blue cheese. Remove from heat.
Add salt and pepper to taste. (Can be made 3 days ahead and refrigerated. To serve, let sit out until room temperature or gently warm in microwave oven.) Adjust seasoning. Garnish with chives.
This topping can be served at room temperature or warm, slightly reheated in the microwave oven. It combines well with Dijon mustard.
