Parslied Potatoes

Recipe Ingredients

1 1/2 lbs 681g / 24ozSmall boiling potatoes
2 tablespoons 30mlButter
  Salt - to taste
  Freshly-ground black pepper - to taste
3 tablespoons 45mlChopped parsley

Recipe Instructions

Cover potatoes with water in medium saucepan. Bring to boil, then lower heat and simmer, covered, until potatoes are tender, about 20 minutes.

Drain potatoes and return to pan over low heat. Add butter, salt and pepper to taste and parsley and shake or stir to coat thoroughly.

This recipe yields 4 servings.

Each serving: 85 calories; 136 mg sodium; 16 mg cholesterol; 6 grams fat; 8 grams carbohydrates; 1 gram protein; 0.22 gram fiber.
