Greens And Diced Tomatoes With Lime Dressing Recipe - Cooking Index
3 tablespoons | 45ml | Oil |
1 tablespoon | 15ml | Lime juice |
1/2 tablespoon | 7.5ml | Honey |
1/2 teaspoon | 2.5ml | Cider vinegar |
1/4 teaspoon | 1.3ml | Minced seeded jalapeño |
1/4 teaspoon | 1.3ml | Salt |
Grated zest of 1 lime | ||
1 | Green onion - sliced | |
Freshly-ground black pepper - to taste | ||
8 cups | 880g / 31oz | Mixed greens |
1 cup | 62g / 2.2oz | Seeded tomato - diced (large) |
Combine oil, lime juice, honey, vinegar, jalapeño, salt, lime zest, onion and pepper in bowl of food processor. Pulse to combine. (Can be made 1 day ahead and refrigerated. Let come to room temperature before using.) Makes about 1/3 cup.
Toss greens with dressing in large bowl. Taste and adjust seasoning. Top with diced tomato. Serve immediately.
