Spicy Garbanzo Beans And Tomatoes Recipe - Cooking Index
2 tablespoons | 30ml | Oil |
3 tablespoons | 45ml | Minced garlic |
3 tablespoons | 45ml | Minced ginger root |
2 | Diced tomatoes - (14 1/2 oz ea) - drained | |
2 | Garbanzo beans - (15 1/2 oz ea) - drained | |
1 teaspoon | 5ml | Ground coriander |
1 teaspoon | 5ml | Ground cumin |
1/2 teaspoon | 2.5ml | Cayenne pepper |
1/2 teaspoon | 2.5ml | Salt |
2 tablespoons | 30ml | Lemon juice |
Heat oil in large skillet over medium-high heat. Add garlic and ginger and cook, stirring, until very fragrant, about 2 minutes.
Add tomatoes, garbanzo beans, coriander, cumin, cayenne and salt. Simmer over medium-low heat until garbanzo beans are very tender and flavors have melded, about 20 minutes. Remove from heat and stir in lemon juice.
