Pickled Carrot And Daikon

This is a colorful addition to Vietnamese sandwiches of pork pate or pork meatloaf.

Recipe Ingredients

1 cup 110g / 3.9ozThinly-sliced carrots
1 cup 237mlThinly-sliced daikon
1 tablespoon 15mlCoarse salt
2 tablespoons 30mlSugar
1/4 cup 59mlVinegar
2 tablespoons 30mlWater

Recipe Instructions

Combine carrots, daikon, salt, sugar, vinegar and water in small bowl. Cover and chill 2 hours.

This recipe yields 1 1/2 cups.
