New Orlean's Dirty Rice Recipe - Cooking Index
1 tablespoon | 15ml | Butter |
1/4 cup | 15g / 0.5oz | Chopped red onion |
1/4 cup | 36g / 1.3oz | Chopped green bell pepper |
1/4 cup | 36g / 1.3oz | Chopped red bell pepper |
1 cup | 160g / 5.6oz | Rice |
1 cup | 237ml | Vegetable or chicken broth |
1 cup | 237ml | Water |
Melt butter in medium saucepan over medium-high heat. Add onion, green and red peppers and cook, stirring until slightly softened, about 3 to 4 minutes. Add rice, broth and water. Bring to boil, then reduce heat to low, cover and simmer until liquid is absorbed and rice is tender, about 15 minutes.
This recipe yields 4 servings.
Each serving: 210 calories; 226 mg sodium; 8 mg cholesterol; 3 grams fat; 39 grams carbohydrates; 5 grams protein; 0.26 gram fiber.
