6 | Strips bacon - cooked, diced | |
1 | Avocado - peeled, diced | |
3 | Hard-boiled eggs - diced | |
1/2 cup | 73g / 2.6oz | Roquefort cheese - crumbled |
Special French Dressing | ||
1/4 cup | 59ml | Water |
1/4 cup | 59ml | Red wine vinegar |
1/4 teaspoon | 1.3ml | Sugar |
1 1/2 teaspoons | 7.5ml | Lemon juice |
1/2 teaspoon | 2.5ml | Salt |
1/2 teaspoon | 2.5ml | Freshly-ground black pepper |
1/2 teaspoon | 2.5ml | Worcestershire sauce |
3/4 teaspoon | 3.8ml | Dry mustard |
1/2 | Garlic clove - minced | |
1/4 cup | 59ml | Olive oil |
3/4 cup | 177ml | Vegetable oil |
For the Special French Dressing, combine water, vinegar, sugar, lemon juice, salt, pepper, Worcestershire, mustard, garlic, olive oil and vegetable oil. Chill. Shake well before using. (Makes 1 1/2 cups)
Mix together lettuce, watercress, endive and romaine in large wide bowl or individual wide shallow bowls. Add chives. Arrange tomatoes, chicken, bacon, avocado and eggs in narrow strips or wedges across top of greens. Sprinkle with cheese. Chill.
At serving time toss with 1/2 cup Special French Dressing. Pass remaining dressing.
Each serving, salad only: 237 calories; 362 mg sodium; 147 mg cholesterol; 15 grams fat; 7 grams carbohydrates; 22 grams protein; 1.82 grams fiber.
Each tablespoon, Special French Dressing: 81 calories; 51 mg sodium; 0 cholesterol; 9 grams fat; 0 carbohydrates; 0 protein; 0.01 gram fiber.
