Microwave Peanut Brittle Recipe - Cooking Index
Cooking times will vary depending on your microwave. After the first 4 minutes of cooking, keep an eye on the brittle and judge it by its color, not microwave time.
Courses: Dessert1 cup | 198g / 7oz | Sugar |
1/2 cup | 164g / 5.8oz | Light corn syrup |
1 cup | 237ml | Salted cocktail peanuts |
1 tablespoon | 15ml | Butter - plus more |
1 teaspoon | 5ml | Vanilla |
1 teaspoon | 5ml | Baking soda |
Stir together sugar and corn syrup in 2-quart glass casserole. Microwave on high 4 minutes until boiling. Stir well. Add peanuts and microwave on high until golden, 3 to 4 more minutes. Don't overcook; watch the color.
Add butter and vanilla, blending well. Microwave on high 30 seconds to 1 minute 30 seconds. Peanuts will be lightly browned and syrup very hot. Add baking soda and stir until light and foamy.
Quickly pour mixture onto buttered baking sheet, spreading somewhat with rubber spatula. Cool completely, about 30 minutes to 1 hour. Brittle will harden fast. When cool, break into pieces and store in air-tight container.
