Raisin Orzo Recipe - Cooking Index
2 tablespoons | 30ml | Butter |
1/4 cup | 59ml | Pine nuts |

1 cup | 237ml | Orzo |
1/2 cup | 80g / 2.8oz | Golden raisins |
1/4 teaspoon | 1.3ml | Ground nutmeg |
2 cups | 474ml | Chicken broth |
1/2 cup | 118ml | Water |
Salt - to taste | ||
Freshly-ground black pepper - to taste |
Heat butter and pine nuts in medium pot over medium heat, stirring until butter has melted and nuts start to turn golden, 2 to 3 minutes. Remove with slotted spoon and reserve.
Put garlic in pot and stir until fragrant, 1 minute. Add orzo, raisins and nutmeg. Stir 15 seconds, then add broth and water. Bring to boil over medium-high heat, then reduce heat to low and cook, covered, 10 minutes.
Season to taste with salt and pepper. Remove from heat. Stir in pine nuts. Serve immediately.
This recipe yields 4 servings.
