Warm Goat Cheese And Tomato Sandwiches

1/2 lb 227g / 8ozGoat cheese
2 teaspoons 10mlOlive oil
1/2   Crusty bread loaf of your choice - thickly sliced
2 cups 474mlLettuce, arugula or endive
2 cups 125g / 4.4ozTomatoes - sliced (large)
1   Red onion - sliced

Recipe Instructions

Heat goat cheese in microwave 40 seconds, then stir.

Dribble 1/2 teaspoon oil and 1 tablespoon cheese on 1 slice bread. Top with lettuce, tomato and onion. Spoon more goat cheese on top. Repeat to make 3 more sandwiches.

This recipe yields 4 servings.
