Goat Cheese, Onion And Red Pepper Burgers Recipe - Cooking Index

And blotted dry | ||
1 | Red onion - sliced in rings | |
1 | Fresh goat cheese - (5 oz) | |

Combine ground beef with oregano, salt and pepper to taste and egg in large bowl. Mix gently but thoroughly. Shape into 4 patties. Chill in refrigerator 10 minutes.
Grill red peppers over medium-hot coals until heated through and lightly charred, about 2 minutes per side. Grill onion rings until tender and lightly charred, about 3 to 4 minutes per side. Cut red peppers into thin strips and combine with onion. Set aside.
Grill burgers over medium heat until desired doneness, about 4 minutes per side for medium-rare. Place in buns and top each with 1 tablespoon goat cheese and 1/4 of onion and pepper mixture.
This recipe yields 6 servings.
