Raspberry Spritzer Recipe - Cooking Index
1 cup | 237ml | Raspberries |
1 tablespoon | 15ml | Water |
1 1/2 teaspoons | 7.5ml | Sugar |
1 | Chilled white wine - (750 ml) | |
2 cups | 474ml | Chilled sparkling water - (to 2 1/2 cups) |

Puree raspberries through food mill, or use food processor or blender and strain puree through a fine mesh sieve. Add water to thin, if necessary. Stir in sugar. Chill for 1 hour.
Stir puree again to be sure sugar is dissolved. Put 1 tablespoon puree in chilled wine glass. Add about 1/2 cup wine and 1/4 to 1/3 cup sparkling water. Stir. Add raspberries and ice cubes, if using. Serve immediately.
This recipe yields 8 servings.
