1 cup | 62g / 2.2oz | Tomatoes - chopped |
1 lb | 454g / 16oz | Mushrooms - sliced |
1/2 cup | 31g / 1.1oz | Onion - chopped |
3 cups | 711ml | Chicken broth |
1/2 cup | 99g / 3.5oz | Butter or margarine |
1/2 cup | 118ml | Red wine |
1/8 teaspoon | 0.6ml | Pepper |
1 teaspoon | 5ml | Salt |
1 cup | 237ml | Cooked green peas |
1/4 cup | 36g / 1.3oz | Parmesan cheese - grated |
1 cup | 160g / 5.6oz | Rice |
In a large skillet, cook rice, tomatoes, mushrooms and onion in butter for 10 minutes, stirring occasionally. Add broth, wine and seasonings. Cover. Simmer 45 minutes, or until rice is tender and liquid is absorbed. Stir in peas. Add cheese. Serves 6.
