Tomatillo-Corn Salsa

Recipe Ingredients

8		Tomatillos - husked, and (medium)
		Coarsely chopped
1 tablespoon	15ml	Finely-diced red onion
1 tablespoon	15ml	Jalapeño - finely minced (small)
2 tablespoons	30ml	Fresh lime juice
2 tablespoons	30ml	Olive oil
3/4 cup	46g / 1.6oz	Fresh corn kernels
		Salt - to taste
		Freshly-ground black pepper - to taste

Combine all ingredients in a small bowl. Chill until ready to serve.
