2 | Ripe tomatoes (medium) | |
2 tablespoons | 30ml | Finely-diced Spanish onion |
2 tablespoons | 30ml | Chopped fresh parsley |
1 teaspoon | 5ml | Red pepper flakes |
1/4 cup | 59ml | Red wine vinegar |
1/4 cup | 59ml | Olive oil |
Salt - to taste | ||
Freshly-ground black pepper - to taste |
Combine all ingredients in a bowl and season with salt and pepper to taste. Serve at room temperature.
