Sophie's Chopped Salad Recipe - Cooking Index
1 | Romaine lettuce head - finely chopped | |
1/2 cup | 118ml | Cooked chick peas |
1/2 cup | 80g / 2.8oz | Cooked red beans |
1 | Cucumber - peeled, diced | |
2 | Tomatoes - diced | |
1/2 cup | 31g / 1.1oz | Fried blue corn tortillas - diced |
1/2 cup | 73g / 2.6oz | Diced Monterey Jack cheese |
1/2 cup | 73g / 2.6oz | Diced cheddar cheese |
1/4 cup | 59ml | Balsamic vinegar |
1 teaspoon | 5ml | Dijon mustard |
1/2 cup | 118ml | Olive oil |
Salt - to taste | ||
Freshly-ground black pepper - to taste |
Toss all salad ingredients together in a medium bowl.
Mix together the vinegar and mustard. Slowly whisk in the olive oil and season with salt and pepper to taste. Dress the salad with the vinaigrette and serve.
This recipe yields 4 servings.
