Sophie's Chopped Salad

Recipe Ingredients

1   Romaine lettuce head - finely chopped
1/2 cup 118mlCooked chick peas
1/2 cup 80g / 2.8ozCooked red beans
1   Cucumber - peeled, diced
2   Tomatoes - diced
1/2 cup 31g / 1.1ozFried blue corn tortillas - diced
1/2 cup 73g / 2.6ozDiced Monterey Jack cheese
1/2 cup 73g / 2.6ozDiced cheddar cheese
1/4 cup 59mlBalsamic vinegar
1 teaspoon 5mlDijon mustard
1/2 cup 118mlOlive oil
  Salt - to taste
  Freshly-ground black pepper - to taste

Recipe Instructions

Toss all salad ingredients together in a medium bowl.

Mix together the vinegar and mustard. Slowly whisk in the olive oil and season with salt and pepper to taste. Dress the salad with the vinaigrette and serve.

This recipe yields 4 servings.
