Soba Noodles With Cucumbers Recipe - Cooking Index
1 lb | 454g / 16oz | Soba noodles |
1/4 cup | 59ml | Soy sauce |
4 | Hot pepper oil | |
2 tablespoons | 30ml | White vinegar |
1/2 teaspoon | 2.5ml | Finely-minced fresh ginger |
2 tablespoons | 30ml | Sesame oil |
1 tablespoon | 15ml | Seedless cucumber - quartered, diced (large) |
Black sesame seeds - to taste |
Cook the noodles in a large pot of boiling water until tender. Drain well.
Whisk together the soy sauce, hot pepper oil, vinegar, ginger and sesame oil and toss with the warm noodles. Add the cucumber and top with the sesame seeds. Serve at room temperature.
