New Potato Salad With Sauteed Onion Vinaigrette Recipe - Cooking Index
3 tablespoons | 45ml | Olive oil |
1 tablespoon | 15ml | Spanish onion - finely sliced (large) |
1 tablespoon | 15ml | Shallot - finely sliced (large) |
2 | Garlic cloves - finely chopped | |
1/2 cup | 118ml | Sherry vinegar |
2 lbs | 908g / 32oz | New potatoes - boiled, quartered |
1/4 cup | 36g / 1.3oz | Finely-chopped parsley |
Salt - to taste | ||
Freshly-ground black pepper - to taste |
Heat the olive oil in a medium skillet over medium-high heat. Add the onions and saute until lightly golden brown. Add the shallot and garlic and cook an additional 1 minute. Remove from the heat and add the vinegar.
Pour the mixture over the warm potatoes, add the parsley and stir to combine. Season with salt and pepper.
This recipe yields 4 servings.
