Grilled Plantain With Spicy Brown Sugar Glaze Recipe - Cooking Index
4 | Ripe plantains - peeled, and | |
Bias-sliced 1/2" thick | ||
2 tablespoons | 30ml | Vegetable oil |
4 tablespoons | 60ml | Light brown sugar |
2 tablespoons | 30ml | Fresh orange juice |
1 tablespoon | 15ml | Honey |
2 tablespoons | 30ml | Coarsely-chopped cilantro |
Salt - to taste | ||
Freshly-ground black pepper - to taste |
Preheat grill.
Brush the plantains with the oil and grill until caramelized, about 2 minutes on each side. In a small bowl, combine the brown sugar, orange juice, honey and cilantro and brush on plantains. Season to taste with salt and pepper.
This recipe yields 4 servings.
