Italian Sausage Risotto

Recipe Ingredients

3/4 lb 340g / 11ozItalian sausage links cut into 1-inch pieces
14 1/2 oz 411gBeef broth
2 oz 56gPimiento - drained, diced
1 cup 160g / 5.6ozUncooked rice
1/4 teaspoon 1.3mlGarlic powder
1/8 teaspoon 0.6mlPepper
9 oz 255gFrozen cut broccoli - thawed
2 tablespoons 30mlParmesan cheese - grated

Recipe Instructions

Cook sausage in large skillet over medium-high heat for 3 to 5 minutes or until well browned, stirring occasionally; drain. Add beef broth, pimiento, rice, garlic powder and pepper. Bring to a boil. Reduce heat to low; cover and simmer 10 minutes. Stir in broccoli; cover. Simmer an additional 10 minutes or until liquid is absorbed and broccoli is tender, stirring occasionally. Sprinkle with Parmesan cheese. 4 (1-1/4 cup) servings.
