Gurkas Norge

Recipe Ingredients

6   Cucumbers (small)
12   Anchovy fillets
1 tablespoon 15mlFinely-chopped fresh dill
1 tablespoon 15mlFinely-chopped fresh chives
3/4 cup 177mlCream cheese
2 tablespoons 30mlSour cream - plus more
  For garnish
  Salt - to taste
  Freshly-ground black pepper - to taste
6 teaspoons 30mlCaviar - to garnish
  Lemon wedges - to garnish
  Parsley - to garnish

Recipe Instructions

Scrape skin of cucumbers lengthwise with fork to make long grooves. Cut in 2-inch sections and cut out seeds, forming rings.

Mash anchovies with dill, chives, cream cheese, and sour cream. Season with salt and pepper. Fill cucumber rings with this mixture and chill in refrigerator for 2 hours.

Garnish each cucumber with a teaspoon of sour cream, then a teaspoon of caviar. Serve with lemon and parsley.

This recipe yields 6 first course servings.
