Shrimp Moska Recipe - Cooking Index
A superb shrimp concoction from the Plantation Restaurant, out of New Orleans.
Type: Fish, Shellfish1/4 cup | 59ml | Olive oil |
2 lbs | 908g / 32oz | Green jumbo shrimp --whole, unpeeled |
1 lb | 454g / 16oz | Fresh oregano sprig - finely chopped (small) |
= (or use dried oregano) | ||
1 | Fresh rosemary sprig - finely chopped (small) | |
= (or use dried rosemary) | ||
Salt - to taste | ||
Coarsely-ground black pepper - to taste | ||
3 | Bay leaves | |
6 | Garlic cloves - peeled, chopped fine | |
1/2 cup | 118ml | Dry white wine |
Heat the oil in a large pan and when hot add the shrimps (unpeeled), the oregano, rosemary, black pepper, salt, bay leaves and garlic. Saute gently for 5 minutes.
Add the white wine and cook gently another 5 minutes, or until the wine is reduced to a syrup. Place on serving dish and pour over aromatic sauce.
This recipe yields 4 servings.
