Asparagus, Apple And Chicken Salad Recipe - Cooking Index
1 cup | 237ml | Fresh asparagus - in 1" pieces |
2 tablespoons | 30ml | Cider vinegar |
2 tablespoons | 30ml | Vegetable oil |
2 teaspoons | 10ml | Minced fresh parsley |
1/2 teaspoon | 2.5ml | Salt |
1/4 teaspoon | 1.3ml | Pepper |
1 cup | 62g / 2.2oz | Cubed cooked chicken |
1/2 cup | 73g / 2.6oz | Diced red apple |
2 cups | 220g / 7.8oz | Torn mixed greens |
Alfalfa sprouts - optional |
Cook asparagus in a small amount of water until crisp-tender, about 3-4 minutes; drain and cool. In a bowl, combine the next six ingredients. stir in the chicken, apple and asparagus; toss. Serve over greens. Garnish with alfalfa sprouts, if desired.
