Deep-Fried Cepes Recipe - Cooking Index
Make this crunchy treat when Boletus edulis is in season.

Preheat a deep-fryer to 300 to 330 degrees. Using a vegetable slicer, slice the stems as thin as possible. Spread the slices on paper towels.
Heat the oil very slowly to 380 degrees. Drop a few chips at a time into the fryer basket and cook quickly. Shake the basket or stir so that they don't stick together. Cook until golden in color. Drain on paper towels and sprinkle with salt.
This recipe yields 5 appetizer servings.
