4 1/2 lbs 2043g / 72ozCourse ground pork
1 1/2 lbs 681g / 24ozSalt pork
1   Garlic
1   Onion - quartered
1 1/2 tablespoons 22mlFreshly ground black pepper
2 tablespoons 30mlSalt
4 tablespoons 60mlPaprika
4 teaspoons 20mlFennel
2 tablespoons 30mlCrushed red pepper - dried
1/4 teaspoon 1.3mlThyme
1/2 teaspoon 2.5mlBay leaf - crushed
1/2 teaspoon 2.5mlCoriander
1 cup 237mlRed wine

Recipe Instructions

Combine all ingredients, mix well and stuff into hog casing. You may split lengthwise and broil under medium heat, or pan fry until brown on all sides and well done.
