Blewits And Peas

Mint adds an aromatic quality to peas and blewits.

Recipe Ingredients

4   Shallots or green onions - minced
4 tablespoons 60mlButter
1 lb 454g / 16ozBlewit mushrooms* - diced
1 lb 454g / 16ozFresh peas or thawed frozen green peas
1/2 cup 118mlChicken broth
  Salt - to taste
  Freshly-ground black pepper - to taste
4 teaspoons 20mlMinced fresh mint

Recipe Instructions

* Alternate Mushrooms: Common Store Mushroom, Shaggy Parasol Mushroom

In a saute pan or skillet, saute the shallots in the butter until translucent. Add the blewits and saute for 5 minutes. Add the peas and chicken broth, and cook for 6 to 7 minutes. Add the salt, pepper, and mint. Cook for another few minutes or until the peas are tender.

This recipe yields 4 side dish servings.
