Blewits And Peas Recipe - Cooking Index
Mint adds an aromatic quality to peas and blewits.

4 tablespoons | 60ml | Butter |
1 lb | 454g / 16oz | Blewit mushrooms* - diced |
1 lb | 454g / 16oz | Fresh peas or thawed frozen green peas |
1/2 cup | 118ml | Chicken broth |
Salt - to taste | ||
Freshly-ground black pepper - to taste | ||
4 teaspoons | 20ml | Minced fresh mint |
* Alternate Mushrooms: Common Store Mushroom, Shaggy Parasol Mushroom
In a saute pan or skillet, saute the shallots in the butter until translucent. Add the blewits and saute for 5 minutes. Add the peas and chicken broth, and cook for 6 to 7 minutes. Add the salt, pepper, and mint. Cook for another few minutes or until the peas are tender.
This recipe yields 4 side dish servings.
