Raita: Yogurt Salad

Recipe Ingredients

2 cups 474mlPlain yogurt
1 cup 110g / 3.9ozCucumber - peeled, seeds (large)
  Removed, finely chopped
3 tablespoons 45mlMinced fresh mint leaves
1/2 teaspoon 2.5mlSalt
1/2 teaspoon 2.5mlGround cumin
1/4 teaspoon 1.3mlPaprika
1   Sugar
1   Cayenne

Recipe Instructions

Place the yogurt in a fine mesh strainer set over a bowl and drain for 1 hour. Discard the liquid in the bowl.

Place the drained yogurt in a medium bowl. Add the remaining ingredients and stir well to combine. Place, covered, in the refrigerator for 1 hour to cool and blend. Stir well and serve.

This recipe yields about 2 cups.
