2 lbs 908g / 32ozChicken thighs and legs
1/2 teaspoon 2.5mlPaprika
1 tablespoon 15mlCilantro - chopped
1/2 cup 31g / 1.1ozOnion - diced
1   Garlic clove - crushed
1 1/2 cups 355mlWater
1/2 cup 118mlWhite wine
3   Tomatoes - diced
1   Bouillon cube
1   Bay leaf
1/2 teaspoon 2.5mlOregano
1 teaspoon 5mlMixed vegetable seasoning
1/2 teaspoon 2.5mlBasil
1 cup 110g / 3.9ozCelery
1/2 cup 46g / 1.6ozAlmonds
3/4 cup 120g / 4.2ozShort grain brown rice
3/4 cup 120g / 4.2ozWild rice
2 cups 474mlPeas

Recipe Instructions

Heat oil and brown chicken in it for 10 minutes. Add paprika, cilantro, onion and garlic. Saute until onion is clear. Stir in water, wine, tomatoes, bouillon cube, and seasonings; combine thoroughly. Stir in celery, almonds and rice. Cover and simmer 20 minutes; add peas and simmer another 10-20 minutes or until rice is ready.
