Kicked Up Tzatziki Sauce Recipe - Cooking Index
1 teaspoon | 5ml | Cucumber - peeled, sliced in (medium) |
Half, seeded and finely chopped | ||
1 cup | 237ml | Plain yogurt |
1 tablespoon | 15ml | Olive oil |
1 teaspoon | 5ml | Lemon juice or white wine vinegar |
1/2 teaspoon | 2.5ml | Salt |
1 teaspoon | 5ml | Dill or oregano |
1 | Garlic clove - minced | |
1/2 teaspoon | 2.5ml | Emeril's Essence - see * Note |

In a medium bowl combine all the ingredients and chill for at least 1 hour to allow the flavors to marry. Serve as a dip for the "Veal Meatballs" (see recipe), or any other fried meat, fish or vegetable.
This recipe yields 1 1/2 cups of sauce.
