3 cups | 187g / 6.6oz | Chopped vine-ripened tomatoes |
1 cup | 62g / 2.2oz | Small-diced red onions |
1 cup | 237ml | Fresh jalapeño - seeded, and (large) |
Cut into small dice | ||
1/2 cup | 8g / 0.3oz | Chopped fresh cilantro leaves - (loosely p |
1 tablespoon | 15ml | Chopped fresh parsley leaves |
1 tablespoon | 15ml | Chopped garlic |
2 tablespoons | 30ml | Oranges - skin and pith (medium) |
Removed, and segmented | ||
Salt - to taste | ||
Freshly-ground black pepper - to taste | ||
4 tablespoons | 60ml | Fresh lime juice |
1 tablespoon | 15ml | Extra-virgin olive oil |
Combine all of the ingredients in a mixing bowl and toss well. Season with salt and pepper. Allow the salsa to sit for 15 minutes before serving.
This recipe yields about 5 cups.
