Smoked Bacon Blue Cheese Muffins Recipe - Cooking Index
1/3 cup | 78ml | Bacon fat |

1/3 cup | 78ml | Water |
1/4 cup | 59ml | Milk |
1/3 cup | 65g / 2.3oz | Sugar |
1/2 teaspoon | 2.5ml | Salt |
2 cups | 125g / 4.4oz | Flour |
1 tablespoon | 15ml | Baking powder |
10 | Basil leaves - cut chiffonade | |
1/4 cup | 36g / 1.3oz | Chopped bacon |
3/4 cup | 109g / 3.8oz | Crumbled Amish blue cheese |
Combine the bacon fat, egg, water, milk, sugar and salt in the bowl of an electric mixer with the whip attachment. Mix until everything is incorporated.
Sift together the flour and baking powder and add into the bowl. Whip until there are no lumps. (do not overmix!) Incorporate the basil, chopped bacon and Amish blue cheese.
Scoop the muffin mix into well greased muffin tins and bake at 350 for 20 to 25 minutes.
