Pumpkin And Vegetable Chowder Recipe - Cooking Index
1 | Onion - chopped (large) | |
1/4 cup | 59ml | Corn oil |
1 tablespoon | 15ml | Tamari sauce |
1 | Ripe tomato - peeled and diced | |
4 cups | 948ml | Vegetable stock |
4 cups | 948ml | Pureed or diced pumpkin |
1 tablespoon | 15ml | Maple syrup |
1 | Broccoli - steamed, and | |
Coarsely chopped | ||
1/2 cup | 118ml | Heavy cream |
Salt - to taste | ||
Freshly-ground black pepper - to taste |
In a large pot, cook the onion in the oil until it is translucent. Add the tamari sauce, tomato, stock, pumpkin, and maple syrup and combine well. Simmer for 30 minutes.
Add the broccoli and cream and simmer another 10 to 15 minutes. Adjust the seasoning, adding salt and pepper to taste.
This recipe yields 4 to 6 servings.
