Parsnip Salad Recipe - Cooking Index
| 1 | Parsnip - grated | |
| 1/2 | Vidalia onion - finely diced (small) | |
| 1 | Celery stalk - (to 2) - chopped | |
| 6 | Ripe or green olives - chopped | |
| (each kind imparts its own different | ||
| Flavor) | ||
| 2 cups | 474ml | Salad greens, torn into pieces |
| 1/4 cup | 59ml | Tarragon Dressing - plus more |
| If desired, (see recipe) | ||
| 2 tablespoons | 30ml | Mayonnaise |
Place the parsnip, onion, celery, olives and salad greens in a salad bowl. Mix the tarragon dressing with the mayonnaise and pour the dressing over the greens. Toss well.
This recipe yields 3 to 4 servings.
