Parsnip Salad

Recipe Ingredients

1   Parsnip - grated
1/2   Vidalia onion - finely diced (small)
1   Celery stalk - (to 2) - chopped
6   Ripe or green olives - chopped
  (each kind imparts its own different
  Flavor)
2 cups 474mlSalad greens, torn into pieces
1/4 cup 59mlTarragon Dressing - plus more
  If desired, (see recipe)
2 tablespoons 30mlMayonnaise

Recipe Instructions

Place the parsnip, onion, celery, olives and salad greens in a salad bowl. Mix the tarragon dressing with the mayonnaise and pour the dressing over the greens. Toss well.

This recipe yields 3 to 4 servings.
