Jansson's Temptation Recipe - Cooking Index
2 tablespoons | 30ml | Vegetable oil |
1/2 | Leek, white part only | |
1 | White onion - chopped | |
4 | Idaho baking potatoes - peeled | |
6 | Anchovies - chopped | |
1 cup | 237ml | Heavy cream |
1 1/2 cups | 355ml | Whole milk |
1 teaspoon | 5ml | Melted butter |
Freshly-ground black pepper |
Preheat oven to 350 degrees.
In a 10-inch skillet, saute leek and onion in oil over medium-low heat until translucent. Transfer to a large mixing bowl and reserve.
Slice potatoes into 1/16-inch slices on a mandolin. Add anchovies and potatoes to sauteed leek and onion mixture and mix gently by hand. Pour cream and milk over mixture.
Spoon mixture into a large baking dish, and pat firmly into pan. Drizzle with melted butter and sprinkle with salt and pepper. Bake for 30 minutes.
Serve with crisp bread.
