Tropical Berry Ambrosia Recipe - Cooking Index
Any child old enough to peel and cut an orange can make this dessert.

6 oz | 170g | Fresh blueberries - (to 8) - rinsed and dried |
2 oz | 56g | Oranges - peeled (medium) |
3/4 cup | 69g / 2.4oz | Sweetened shredded coconut |
1 | Lime |
Rinse the berries in a colander (in the sink) just before using. Remove any green leaves. Pat berries dry on paper towels. Peel 2 oranges, being sure to cut off any excess bitter white part (pith).
Slice the oranges across into 1/4-inch-wide slices. (They should look like pinwheels.) Cut the lime in half. Cut the strawberries in quarters.
Place half the orange slices in the bottom of a serving bowl. Add a layer of coconut, then half the strawberries, another layer of coconut, half the blueberries and another layer of coconut. Squeeze half the lime over the top layer. Repeat layers with remaining ingredients finishing with another squeeze of lime.
Cover and refrigerate for at least one hour. About 30 minutes before serving, stir to mix ingredients. Serve chilled.
Tip: For a lovely presentation, bring ambrosia to the table before mixing to show the colorful layers.
