Shortcut Pea Soup Recipe - Cooking Index
This rich and delicately seasoned soup, made quickly in a blender or food processor, will taste as though you spent hours in the kitchen.
Courses: Soup3 cups | 711ml | Frozen peas |
1/4 cup | 59ml | Chicken broth |
1 cup | 237ml | Heavy cream |
1/2 teaspoon | 2.5ml | Salt |
1/4 teaspoon | 1.3ml | Freshly-ground black pepper |
1/2 teaspoon | 2.5ml | Freshly-grated nutmeg |
Dollop of sour cream |
Boil peas in salted water until tender, according to directions on the package. Drain the peas and place in a blender or food processor. Add chicken broth and puree until smooth. Add heavy cream a little at a time. Blend.
Pour into a saucepan and stir in salt, pepper, and nutmeg. Heat thoroughly but do not boil. Garnish each bowl with a dollop of sour cream and serve.
This recipe yields 2 servings.
